Happy Easter!

What other way to celebrate Easter then with carrot cake and lots of food. I should add that I don't actually believe in anything Easter has to offer I just love cake and food and bunnies and spring time colors!
Carrot cake in mini cupcake form with fresh carrots and roasted pecans in the middle. Frosting had to be cream cheese, of course. I have never made mini cupcakes and they were the cutest things I have ever seen.

I had batter left over so I made a mini cake and toped it with pecans. I never leave batter to waste. I experimented by cooking it in a toaster oven, it seemed to have come out great and moist.

I love adding little ingredients of my own and changing recipes around a bit and see how they turn out. The whole secret is really thinking about the main ingredient who are working with and finding spices or other things that you find go well with that flavor.

I know this is my baking blog but I just wanted to show everyone the awesome food we had, I thought it was thanksgiving all over again. Yum Yum Yum!
